The Art of Roasting Single-Origin Ecuador Coffee

Respecting the Origin

Single-origin coffee demands respect. When you're roasting beans from one specific region—in our case, the farms near Chimborazo in San Miguel—your job is to highlight what's already there, not mask it with over-roasting.

Our roasters understand that Ecuador coffee has distinct characteristics: natural sweetness, balanced acidity, and subtle chocolate and nutty undertones. The roasting profile we've developed after years of testing brings these forward without overwhelming them. We're not trying to make Ecuador coffee taste like Ethiopia or Colombia. We're making it taste like itself.

Our Roasting Philosophy

  • Small-batch roasting for consistency and quality control
  • Medium roasts that preserve the coffee's origin characteristics
  • Careful monitoring of temperature and development time
  • Cooling immediately after roasting to lock in flavor

The difference between a roasted coffee that sings and one that falls flat often comes down to patience and precision. We roast to order whenever possible, ensuring that when your bag arrives, the coffee is at peak freshness.

You'll notice that our single-origin Ecuador roasts have a clarity that blended coffees sometimes lack. You can taste the volcanic soil, the altitude, the care taken by the farmers. That's what happens when roasting honors the origin rather than obscuring it. It's why coffee lovers choose single-origin—and it's why we're proud to roast ours with such intention.
